Among the new additions is a salmon tartare with keta caviar and lovage chlorophyll starter and a seasonal salad with walnuts and mustard dressing. Five new homemade pasta dishes include ravioli stuffed with ricotta and borage served with butter and sage, squid ink tagliolini with prawns, lime and a cherry tomato sauce, malloreddus with pork sausage ragu and shaved Sardinian pecorino cheese, pappardelle served with white veal ragu and strozzapreti with mussels and green turnip top. Roasted baby chicken served in a tomato, caper and taggiasche olive sauce, roasted salted cod served with cauliflower velouté and a pepper, olive, anchovy and smoked onion salad and a sweet and sour swordfish main have also been introduced to the new menu. And from the dessert menu, choose from the hazelnut and passionfruit semifreddo, which illustrates the move from the winter season to spring, apple pie, chef style and the vegan tahini pannacotta.
Alongside the à la carte menu, il Pampero is also now serving the new February Set Lunch Menu. Choose from two or three course – highlights include the bresaola with rocket and gorgonzola starter, the Fregola with mussels and daterrino tomatoes and the white chocolate mousse dessert.
